History

The seven seeds: how Indian coffee began

In the early 17th century, the Arab world held a near-total monopoly on coffee. The Ottoman Empire controlled the trade routes out of Yemen, and the export of fertile, unroasted coffee seeds was strictly prohibited — a calculated move to ensure that coffee cultivation could never take root elsewhere. For decades, this monopoly held firm.

Then came Baba Budan — a Sufi pilgrim from the Mysore region of India, returning from the Hajj in Mecca. The legend holds that he managed to obtain seven fertile coffee seeds in the Yemeni port of Mokha, and — with remarkable nerve — taped them to his stomach to smuggle them past the authorities. Seven seeds, hidden under a pilgrim’s robe, carried across the sea to southern India.

He planted them in the hills of Karnataka, in a region that still bears his name today: the Baba Budan Giri hills.
Those seven seeds took root, and from them grew what would eventually become India’s coffee industry. More importantly, they helped break the Arab monopoly on coffee cultivation entirely.
Once it was proven that Arabica could thrive beyond Yemen, the floodgates opened — the Dutch brought seeds to Ceylon and Java, the French to the Caribbean, and within a century the great coffeehouses of London, Paris, and Amsterdam had a global supply chain to draw from.

 The Baba Budan Giri hills in Karnataka remain an active coffee-growing region to this day — still producing beans nearly four centuries after that first planting.


Terroir

The world’s only fully shade-grown origin

India holds a distinction shared by no other major coffee-producing country in the world: all of its coffee is grown under a full forest canopy. This isn’t a marketing claim or a niche practice — it is simply how Indian coffee has always been cultivated, born out of the dense, biodiverse forests of Karnataka and Kerala where the first trees were planted.

The reduced light intensity slows photosynthesis, which means cherries take longer to ripen, sugars develop more gradually, and the resulting beans carry a denser, more complex flavour structure.
The forest canopy also provides a natural ecosystem — birds, insects, and organisms that control pests without the need for synthetic inputs — making Indian coffee one of the more naturally sustainable origins in the world.

The primary growing regions — Coorg, Chikmagalur, and the Nilgiri hills — sit at elevations of 1,000 to 1,500 metres, surrounded by cardamom, pepper, vanilla, and other spice plants.
This proximity is not merely botanical scenery: it directly influences the cup.
Indian coffee is famous for its spicy, earthy undertones, and much of that character can be traced back to the aromatic ecosystem in which the trees grow.


Processing

Monsooned Malabar: India’s gift to coffee science

India’s most extraordinary contribution to the world of coffee is a process that exists nowhere else on earth — and it was born entirely by accident.

In the era of sailing ships, Indian coffee destined for European markets spent months at sea in wooden hulls.
During the long voyage around the Cape of Good Hope, the green beans were exposed to the damp salt air of the Indian Ocean.
By the time they arrived in European ports, they had transformed: swollen, pale yellow in colour, dramatically lower in acidity, and carrying a thick, heavy, almost musty sweetness that European buyers came to prize above all else.

When steamships replaced sailing ships and the journey shrank from months to weeks, European buyers noticed that the coffee tasted different — brighter, thinner, less of the character they loved. They complained. Indian producers, faced with losing their market, set about replicating the effect of that long sea voyage on land.

The result was Monsooned Malabar — a process still practised today on the Malabar Coast of southwestern India.

1 Harvest and preparation

Coffee cherries are harvested and processed (typically using the dry or washed method) to produce green beans ready for export.

2 Open-sided warehouse storage

The green beans are spread in open-sided warehouses on the Malabar Coast during the monsoon season (June to September). The warehouses are deliberately designed to maximise exposure to the moist, warm winds blowing in off the Arabian Sea.

3 Monsoon exposure and swelling

Over the course of 12 to 16 weeks, the beans absorb moisture from the monsoon winds. They swell significantly — sometimes doubling in size — and their colour shifts from green to a distinctive pale gold or straw yellow. Crucially, the natural acids in the bean break down during this process, producing a cup that is almost entirely free of the sharp brightness found in most other origins.

4 Raking, turning, and drying

Beans are raked and turned regularly throughout the process to ensure even exposure and prevent mould. Once the monsoon season ends, they are dried, graded, and bagged — typically in burlap sacks that allow the beans to continue breathing.

What monsooning does to the cup

The long monsoon exposure breaks down the chlorogenic acids that produce brightness and sharpness in most coffees, leaving behind a thick, low-acid cup with a unique “musty” sweetness — sometimes described as the taste of coffee aged on a long sea voyage. It is the closest you can get today to the coffee that filled the coffeehouses of 17th-century London.


Varieties

Arabica and Robusta: India’s dual identity

Unlike most specialty-focused origins, India grows both Arabica and high-quality Robusta — and unusually, its Robusta is worth talking about.

Indian Arabica, grown primarily in the highlands of Coorg and Chikmagalur, produces the classic monsooned and shade-grown lots that have defined India’s specialty reputation.
Look for the Kent and S.795 varieties — heritage Arabica selections developed specifically for the Indian climate that produce a notably smooth, full-bodied cup.

But India’s Robusta — particularly the kaapi royale grade from the Wayanad region of Kerala — punches well above its category.
High-altitude Indian Robusta carries far less of the harsh, rubbery bitterness that gives the species its poor reputation in specialty circles.
Instead, it offers a dense, chocolate-heavy body and a strong crema that makes it one of the most sought-after Robustas in the world for espresso blending.

The acidity in a monsooned Indian coffee is strikingly low — almost absent compared to a Kenyan or Ethiopian. What fills that space instead is a thick, velvety body and a layered spice complexity that lingers on the palate long after the cup is finished. Expect dark chocolate up front, a hint of cardamom or black pepper in the middle, and a deep, earthy, almost woody finish.

Indian coffee — especially Monsooned Malabar and high-grade Kaapi Royale Robusta — is one of the great secret weapons of the espresso world.
Its near-zero acidity, enormous body, and intense crema-producing qualities make it the ideal addition to any espresso blend, and a revelation on its own for those who want the full weight of the cup without the brightness that can make espresso feel harsh.

Indian coffee shines brightest under pressure. The low acidity and high body density produce a generous, persistent crema — far more than most single origins — and the flavour cuts cleanly through milk in a way that lighter, more acidic origins cannot. As a single origin espresso, expect a bold, spicy shot with a long, chocolatey finish. As a blend component, even 20–30% of a Monsooned Malabar or Kaapi Royale lot will noticeably deepen the body and crema of the finished blend.

The stovetop moka pot is a natural fit for Indian coffee — it applies moderate pressure and produces a concentrated, oil-rich brew that suits the weight and spice character of the bean beautifully. Use a medium grind, fill the basket without tamping, and brew on a low-to-medium heat. The result is a thick, intensely flavoured cup that holds up well with a small pour of warm milk, replicating the classic South Indian “filter kaapi” style that has fuelled the subcontinent for generations.
