The archipelago that lent coffee its global nickname — and still produces some of the heaviest, earthiest cups on earth


The island that became a word for coffee

The Dutch East India Company brought the first coffee seedlings to Batavia, now known as Jakarta, in 1696. The plants thrived in the volcanic soils and tropical climate of the archipelago, and by the early 1700s Indonesia had become the first place in the world outside Ethiopia and Arabia to grow coffee as a serious commercial crop.
The Dutch had effectively broken Arabia’s centuries-old monopoly on coffee cultivation, and Java rapidly became one of the most important coffee-producing regions on earth.

For a 17th-century Londoner, Indonesian coffee represented the absolute height of luxury.
It travelled an extraordinary distance to reach European cups — a gruelling six-month voyage by sea, packed in wooden ship hulls.
During that journey, the salt air and persistent humidity of the tropics worked on the beans, ageing them, deepening their colour to brown, and mellowing their natural acidity.
The resulting cup became legendary in its own right: the “Old Brown Java” — heavy, mellow, and utterly unlike anything grown closer to home.
It is this profile that modern Indonesian coffee, and specifically the wet-hulling process described below, still seeks to recreate.


The science of Giling Basah

What makes Indonesian coffee — and Sumatran coffee in particular — genuinely unique in the world is a processing method found almost nowhere else: Giling Basah, or wet-hulling.

In nearly every other coffee-producing country, the parchment layer that protects the bean is left intact until the bean has dried down to a stable 10–12% moisture content. Indonesia does things differently.
Smallholder farmers, working in a famously humid, rain-soaked climate with limited access to large drying facilities, developed a method of removing the parchment while the bean is still soft and unusually high in moisture — typically around 30 to 35%.

Pulping and brief fermentation

Cherries are depulped and left to ferment briefly, often overnight, before a light wash removes most of the mucilage.

The beans, still encased in their parchment shell, are dried only briefly — often for less than a day — down to roughly 30–35% moisture, far wetter than the standard for hulling anywhere else.

Wet-hulling

While still soft and damp, the parchment is mechanically removed, exposing the bare green bean directly to the air. This is the defining step of Giling Basah and the source of its name, which translates roughly to “wet grinding.”

Final drying

The now-naked beans are dried a second time, exposed directly to the humid tropical air.
This final stage is where the chemical transformation that defines Indonesian coffee really takes hold.

Why it matters

Exposing the bean while it’s still damp and unprotected triggers a distinct chemical reaction during drying, breaking down the bean’s structure in a way that dramatically lowers acidity and builds body. The result is a heavy, syrupy cup with intense notes of cedar, tobacco, and dark chocolate — flavours that simply don’t appear in coffees processed by conventional drying methods.


Varieties

Arabica and Robusta, side by side

Indonesia produces meaningful volumes of both major coffee species, and each plays a distinct role.
High-altitude Arabica — grown in regions like Sumatra’s Aceh and Lintong districts, the Indonesian island of Sulawesi, and the original heartland of Java itself — is where the country’s specialty reputation is built. These beans go through the wet-hulling process and develop the dense, earthy, low-acid character Indonesia is famous for.

Robusta, grown at lower elevations across the archipelago, plays a different role: bulk volume, body, and crema for commercial blends and instant coffee production. It rarely reaches specialty grade, but it remains an important part of Indonesia’s overall coffee economy.

Acidity is almost entirely absent. In its place is a thick, almost syrupy mouthfeel and a deep well of earthy, savoury flavour — dark chocolate, damp cedar, tobacco leaf, and a faint herbal quality that some tasters compare to fresh-turned soil.
It’s a profile that divides opinion: some find it the most comforting, “old world” cup in the coffee world; others find it too heavy.
There’s little middle ground, which is exactly what makes it worth trying.


How to brew it: the old world cup

Indonesian beans are built for long, immersive brewing.
They don’t rely on acidity or delicate aromatics to be interesting — they rely on texture, weight, and depth, all of which are best extracted through methods that let the oils and fine sediment pass into the cup rather than being filtered out.

Recommended method: French press

The metal mesh filter of a French press is the ideal partner for Indonesian coffee. Unlike paper filters, it allows the heavy natural oils and fine “earthy” sediment of a Sumatran Mandheling to pass straight into the cup, producing a full-bodied brew with real weight on the palate — the closest thing to a cup you can almost chew on. Use a coarse grind, a 1:15 ratio, and steep for 4 minutes before plunging slowly.

Milk pairing

Indonesian coffee is one of the rare specialty origins that genuinely improves with a splash of cream or milk.
The added richness complements the chocolatey, earthy base rather than masking it, making a Sumatran the natural choice for anyone who usually takes their coffee with milk but still wants something with genuine specialty depth.
